2. Consider the crowd
Trucks may be able to cater the entire meal if your wedding is small. For larger parties, think about hiring a truck for appetizers or dessert, or supplementing a main course of lobster rolls or pizza with a raw bar from a local seafood shop or hors d'oeuvres from another caterer.
3. Check with your venue
Wineries, farms and other outdoor locations may have rules about truck parking, and some catering halls and restaurants don't welcome outside food purveyors. Before contracting a food truck, check your venue's regulations and food truck receptiveness.
4. Plan ahead
Most of these operations have just one truck, so if you have one particular date in mind, reserve early.
5. Ask about travel
Trucks that have to travel a long way will tack on a travel fee along with food charges and labor costs.
6. Speak up with special requests
