The expansion of Just Salad on Long Island continues as the rapidly growing fast-casual restaurant chain plans openings of two new locations this year.
Just Salad, headquartered in Manhattan, plans to open in East Meadow — at 2411C Hempstead Tpke. — during the second quarter of this year, and another shop at 1995D Nesconset Hwy. in Lake Grove during the fourth quarter, the company told Newsday.
The planned expansion comes on the heels of its March 5 opening in Plainview location at 373 S. Oyster Bay Rd., the company said.
"We're thrilled to open our seventh Long Island location in Plainview, expanding our presence in the region and bringing our healthy, nutritious offerings to more guests,” the company said in a statement Wednesday.
“As we continue our nationwide expansion, we're excited to deepen our roots on Long Island and become part of the vibrant Plainview community,” the company said. “We look forward to serving more guests in the area with several additional openings planned for Long Island this year.”
Starting in 2023, the chain has grown to seven sites on the Island so far.
Just Salad’s sixth location opened late last year in Port Washington at 143 Shore Rd.
In February, the company announced it had raised $200 million in capital from an investor group led by Wellington Management. The capital raise “values the company at approximately $1 billion,” Just Salad announced in a news release.
The company said the capital will help it add new locations and invest in its menu and new technology.
