Fifteen years ago, chef Brian Valdini popped home to Long Island for a vacation, fully intending to return to his career in Europe. Instead, he took over a waterfront bistro in Bay Shore, named it FatFish, and began turning out Mediterranean-style seafood and summery cocktails. A decade and a half after opening, has FatFish kept its polish?
