Angelo De Luca, above, of Deer Park plants Beefsteaks, Belgium Giants and cherry tomatoes alongside other vegetables in raised beds. "I use pure organic horse manure from my son’s horse, 'Serge,'” he says, adding that his beds are 4 feet wide, 8 feet long and 18 inches high.

His bottom line? "I enjoy the challenge of having a large crop."
