Japanese cuisine is a springboard on Long Island and, increasingly, part of the Asian-fusion culinary complex. Here are some restaurants where the chemistry works.

TING, 92 E. Main St., Huntington; 631-425-7788

The wide-ranging specialties at Ting take in chicken lettuce wraps, miso black cod, grilled New Zealand lamb, Asian duck tortillas, red snapper carpaccio, Thai vegetable rolls and very good, multi-ingredient sushi rolls.

TOKU MODERN ASIAN, 2014 Northern Blvd., Manhasset; 516-627-8658

The most stylish table in the Americana shopping center is Toku's. Sample the fluke tiradito, Kurobuta pork gyoza, tuna spring roll, braised Berkshire pork belly, roasted lobster with udon noodles, braised spareribs and sushi in all forms.

KASHI, 222 Sunrise Hwy., Rockville Centre; 516-442-7600

The sushi-and-steakhouse is a glossy, entertaining spot. Try the steamed shrimp dumplings, chu chu lobster salad with seared pepper tuna, the tuna tortilla, almond-crusted snapper and the tasty "signature rolls." Kashi also has a branch in Huntington at 12 Elm St.; 631-923-1960.
