Bar A Dessert opens in Patchogue serving rolled ice cream

Thai stir-fried ice cream, a dessert made with dramatic flourish, has arrived in Patchogue.

Ice cream rolled to order on a freezing griddle is the main event at Bar A Dessert, which opened in a slim Ocean Avenue space in early February.

The process originated in Thailand but has spiked in popularity in the U.S. in recent years. Each dessert begins with morsels such as Oreos or blueberries plopped onto a flat metal disc that resembles a griddle, which has been cooled to minus 21 degrees.

Then, the cook pours sweetened liquid cream over the morsels , blending it with the flavoring via rapid, noisy chopping and scraping (thus the stir-fried label). Once this cools to a stiff paste, it is scraped into rolls that resemble tiny rolled-up carpets, placed in a cup and topped with anything from mochi to whipped cream and salted caramel pearls. The result looks like a stripped-down but more colorful version of a traditional ice cream sundae.

So far, Bar A Dessert sells five flavors, including Oreo Hero (Oreo ice cream, chocolate sauce, toasted marshmallow topping) and Matcha Green (green tea ice cream, blueberry, coconut flakes and mint). Each is $7.95.

Also on the menu are desserts such as molten chocolate lava cake ($12) and yuzu cheesecake with green tea mousse ($10), as well as espresso drinks. Bubble tea is coming soon, said owner Ansen Wang.

“In this town, everyone loves sweets,” said Wang, who also co-owns 360 Taiko Sushi & Lounge across the street. His partners in the venture are chef Anan Tiwadon and Jungle Fu, who came up with Bar A Dessert’s sleek decor — high-top tables, white leather seats, bleached woods and a wall-length mural.

Bar A Dessert has about 20 seats and is open daily from 2 to 11 p.m. Monday to Friday, noon to midnight on Saturday, and noon to 10 p.m. on Sunday.
