Bar Louie, a national chain that describes itself as “an eclectic urban bar” serving “handcrafted martinis” and a menu of “regionally inspired” American food, is taking over the old Chuck E. Cheese location on Jericho Turnpike in Commack that closed in June. The company says it hopes to open in February.

The menu features crowd-pleasing, drinks-friendly fare such as beef brisket sliders with peach moonshine barbecue sauce, pickles and grilled pear slaw; Bavarian pretzel sticks, served with cinnamon butter, queso and honey mustard; pan-seared potsticker dumplings with Szechuan sauce; the Louie burger, with grilled onion, provolone and spicy giardiniera; Tuscan chicken cavatappi with spinach, mushrooms and Alfredo sauce.

Among the drinks: the Orange Mule, with Absolut Mandrin, Solerno Blood Orange Liqueur, lime juice and ginger beer; and the Ultimate Bloody Louie with Absolut Peppar, Guinness Stout, Little Hellion Hot Sauce and bloody Mary mix.

Headquartered in Addison, Texas, Bar Louie operates 102 locations in 26 states. There are two in New York State (in Buffalo and in Greece, near Rochester) but this will be the first on Long Island. The Commack location will hire 90 to 95 people, said Dan Drummond, Bar Louie’s chief marketing officer. It will be corporate-owned, but Bar Louie also manages franchise operations.
