Bread & Butter, a bistro with very extended hours, has opened in the Ramada Plaza Long Island hotel just off exit 63 on the Long Island Expressway in Holtsville. On Thursdays, Fridays and Saturdays, the place is open 24 hours. Sunday through Wednesday, the kitchen opens at 5 a.m. and closes at 1 a.m.

That kitchen is under the direction of Piers Stringer, a veteran of Shandon Court in Islip and currently also the executive chef at Emporium, the music-venue-bowling-alley-restaurant-club in Patchogue. (The owners of Bread and Butter, Tim Lorito and Matt Dill, also own Emporium, as well as four Canz-a-Citi Roadhouse “breastaurants.”)

At Bread & Butter, breakfast is served from 5 a.m. to 3 p.m. and the menu includes homemade vanilla, pineapple and strawberry yogurt; pancakes ($5.95), omelets ($6.95) and a “Bread and Butter fry” ($22.95) that pays homage to chef Stringer’s British heritage: bacon, sausage, grilled ham, steak, roasted mushrooms and tomato.

The rest-of-the-day-and-night menu is a mashup of bar food (chicken fingers, $8.95), New American (apple-braised pulled-pork taco, $8.50; lemon-crusted haddock, $14.50), comfort classics (chicken potpie, $14.95; steak and biscuits, $21.95) and burgers ($9.95-$13.95).
