Build your own pizza at Piecraft Pizza Bar in Island Park
It's all about personal preference at the new Piecraft Pizza Bar in Island Park, a fast-casual spot where you move down a line and pick out the components for your pizza. In concept, it's akin to Blaze Pizza, a national chain with a branches in Bay Shore and West Babylon.
This, however, is the first Piecraft Pizza Bar to open anywhere. It's under the same co-ownership as Olive Oils in Point Lookout and both Minnesota's and Cafe Laguna in Long Beach. Executive chef Alex Sacchetti owned the former Margarita Pizza Bar in Los Angeles and grew up working at Racanelli's Pizza & Brew in Westchester, which his family owns.
In Island Park, two ovens run at 600 degrees, cooking a 10-inch pie in two minutes. One oven is devoted entirely to gluten-free pies, for which servers don special gloves and use dedicated utensils. Pizza prices start at $5.99 ($8.99 for gluten-free), with toppings ranging from $.99 to $1.99 apiece. Choices include caramelized onions, grilled artichokes, pepperoni, grilled shrimp and prosciutto di Parma. You can also opt for a preset pizza, like the Burrata, with a balsamic drizzle, or the Go Figure, topped with fig jam, goat cheese, prosciutto and Gorgonzola (at $12.99, the costliest item on the menu). Non-pizza choices include a beet and quinoa salad bowl, veal Marsala meatballs, white bean and escarole soup and, for dessert, house-made cannoli. Beer and wine are also on hand.
