If the Flaming Turtle (milk chocolate, caramel, candied pecans), Yin & Yang (dark and white chocolate), or the Bananas Foster (white chocolate, bananas, dulce de leche) don't appeal, you can design your own fondue, choosing from a list of chocolates, liqueurs and add-on ingredients. North Fork Chocolate Company

Valentine's Day is a busy one at the North Fork Chocolate Company (740 Main Rd., Aquebogue), which sells truffles, bars, and other chocolate confections at its shop from Wednesday through Sunday from 11 to 5. On Fridays, Saturdays, and Sundays through February, the they will also be hosting a buffet-style hot chocolate bar. Belgian waffles and fruit will be served, with fondue cups for dipping. Long a local favorite, Hildebrandt's (84 Hillside Ave., Williston Park) became nationally known after a visit from the Food Network's Guy Fieri. A luncheonette-ice cream parlor might not be the first place you'd look for chocolate fondue, but you can indeed find a respectable version of the classic Swiss dessert for $5.25 at Hildebrandt's.
