Coyote Grill, Island Park, reopens as Coyote Mexicano
Coyote Grill in Island Park just reopened for the season as Coyote Mexicano Cocina & Tequila Bar. “We now have more of an emphasis on Mexican cuisine,“ said owner John Vitale.
Chef Peter Durand, who formerly cooked at the Marriott Marquis, is putting out such specialties as an heirloom tomato and watermelon salad with Cotija goat cheese ($9), a Mexican fisherman’s stew ($24) and beef brisket enchiladas ($16). Tacos, made with soft corn or flour tortillas ($16 to $17), are available with beef, pork, fish, chicken and vegetable fillings.
For 22 years, Coyote has hosted a throbbing outdoor summer bar scene and this year should be no different, with live music kicking in Memorial Day weekend, running Wednesday through Sunday nights.
