Quinoa at Duryea’s? Until this year it would have been unthinkable. But now that the 80-year-old Montauk landmark lobster shack-fish market has opened under new ownership, major changes are afoot.

In 2014 Perry B. Duryea III sold Duryea’s Lobster Deck to private-equity billionaire Marc Rowan (whose company also owns the new Mediterranean restaurant The Arbor, less than a half-mile away). Last summer it was business as usual at the bare-bones eatery, but this year the new owners have made their presence felt.

The new Duryea’s has retained such menu items as New England clam chowder ($11), lobster roll ($28), lobster ($52 for a 2-pounder), but has added quinoa tabbouleh ($19), tuna tartar ($18), skirt steak chimichurri ($48) and a Greek grilled veggie wrap with local feta cheese ($16), among other new dishes.

Once BYOB, Duryea’s now offers beer and wine (including a Paul Goerg Blanc de Blancs NV Champagne for $95). Plastic seats (and plates and cutlery) have given way to teak furniture and stainless dinnerware.
