KYMA, 1446 Old Northern Blvd., Roslyn

This excellent Greek establishment stars with whole grilled fish, such as red snapper, black sea bass and royal dorado, and the exceptional grilled octopus with onions, capers, olive oil and red wine vinegar. Also, enjoy the shrimp saganaki, grilled tiger shrimp and taramasalata.

NAVY BEACH, 16 Navy Rd., Montauk

Sit at a bench with your feet in the sand, savor the water view and be sure to order the clam-and-corn chowder, salt-cod fritters with smoked jalapeño tartar sauce, fluke, scallop and shrimp ceviche, salmon tartare, and octopus with garbanzo beans, feta and cherry tomatoes.

VIEW, 3 Consuelo Place, Oakdale

The waterside restaurant will lure you with its raw bar, crisp Thai calamari with peanuts, cilantro and lime, General Tso's lobster in sweet-spicy sauce, crabcakes with Meyer lemon aioli, and yellowfin tuna tartare with a sesame-ginger vinaigrette.

BAY KITCHEN BAR, 39 Gann Rd., East Hampton

From a breezy second-floor perch overlooking ripples, boats and islands, enjoy chef Eric Miller's satisfying summer cuisine, including full-flavored fisherman soup with floating cuts of fluke, striped bass and tuna. The eastern whole belly clams combine crunch and sweetness, and the lobster salad roll, on toasted brioche, is a refreshing main course.
