It’s been a long while since I’ve had fajitas as good as those recently sampled at Island Grill, a sliver of a Tex-Mex spot in West Babylon. Here, the entire crew hails from China. The young woman who took my order was clearly proud to say that just about everything served — including flour tortillas — had been made on premises, “from scratch.“

Lunch was eaten at a counter stool by a mirrored wall — meaning the view I got was of myself, chewing. I didn’t care, since I was so happy with my platter, served in a Styrofoam container. There was juicy, smoky grilled dark meat chicken —  the only kind any eatery should serve — with light-textured guacamole and spot-on rice and black beans. Those fresh flour tortillas were as satisfying as most soft corn versions I’ve had. At $5.29, the deal was hard to beat.

Also on the menu: Monterey Jack and shrimp quesadillas ($3.49), a steak burrito ($5.59) and a Tex-Mex chili and guacamole platter ($5.29).
