Long Island certainly has its share of Asian fusion restaurants, but its newest, Lotus Asian Fusion in Hicksville, goes beyond the usual dual-cuisine combo by uniting three regional cuisines: Chinese, Thai and Indian.

Bright and airy, Lotus opened its doors on West Marie Street last month, and owner Sunny Sondhi is pleased with the community’s embrace of its menu.

“My mom is the chef,” said Sondhi of his mother, Rozy. “She has all the recipes. She was born in New Delhi, and cooking has always been a hobby of hers, so she experimented with different Asian cuisines.”

Her specialties are butter chicken in a creamy tomato sauce ($15.95), lamb chops marinated in fresh ginger, garlic and yogurt sauce ($19.95), coriander garlic chicken with bell pepper and onion ($13.95) and pad Thai with fresh vegetables, bean sprouts and peanuts ($14.95).

LG, the bartender, who goes by his initials, was quick to point out his signature cocktail, the Spicy Indian Lady: pineapple syrup, spices, vodka and fresh mint.

A family operation, Sondhi’s father and brother also pitch in. That’s a good thing because ambitious Lotus is open seven days a week for eat in (check out its Sunday brunch) or take out, as well as catering.
