This Saturday night Madison’s on Hillside will host a wine dinner with Bruno Tait, co-owner of his family’s winery, Tait Wines in Australia’s Barossa Valley.

While Tait discusses his winemaking philosophy, the restaurant will be pouring two of his wines, The Ball Buster ($48 bottle, $13 glass), a gutsy blend of shiraz, merlot and cabernet sauvignon; and the 2005 Basket Press Shiraz ($80 bottle), which wine critic Robert Parker awarded 93 points.

In addition to the regular menu, Chef Jeffrey Slade has created some special dishes incorporating the two wines:

Basket Press Shiraz-braised short ribs with parsnip puree and chanterelle mushrooms, $16 as an appetizer

Montauk swordfish topped with oyster mushrooms and a Ball Buster buerre blanc, $31

Sliced strip steak with steak fries, cipollini onions, sugar snap peas and Basket Press Shiraz-beef jus, $35

Tait will be on the premises from 7 to 9:30 p.m. Reservations are recommended.
