Cyril’s Fish House has gone on to that great beach party in the sky. Unable to fulfill the Town of East Hampton’s demands for a drastically reduced outdoor presence (among other issues), Montauk’s boisterous watering hole has sold off every furnishing from the ceiling fixtures to the iconic 12-foot marlin that used to swim atop the blue-and-white striped awning.

Those wild Montauk nights will live on in memory only, but Cyril’s signature drink, the BBC, can be enjoyed in the privacy of your own home — where the Town of East Hampton, presumably, has no jurisdiction. Cyril Fitzsimons never disclosed the exact recipe for his version of the Bailey’s Banana Colada, but we’ve reverse-engineered a pretty fair facsimile.

 

THE BBC (BAILEY’S BANANA COLADA)

1 ripe banana

1 ounce banana liqueur

1 ounce Baileys Irish Cream

1 ounce dark rum, plus more for floating on top

3 ounces piña colada mix

1 cup ice

In a blender, process banana and liqueur until they form a thick paste. Add Bailey’s, piña colada mix and rum and blend well. Add ice and blend until smooth. Pour into a glass and, if desired, float a layer of rum on the surface. Drink with a straw. Makes 1 serving.
