Spiros Kannavos is now the top toque at Babylon Carriage House, after the departure of Joseph Balbo (who recently opened Trattachino in Wantagh). Kannavos, a Culinary Institute of America graduate, was a co-owner and executive chef at the former Dick & Dora’s in Massapequa.

While Kannavos has slightly revised the restaurant’s menu, his creativity truly comes out to play in a roster of chef’s specials. From that list, he named as a signature dish wild mushroom-crusted Chilean sea bass in a cracked-peppercorn brandy sauce, which he described as “earthy, savory and rich — not heavy.” The fish is served with shoestring potatoes and spinach. ($29). A dessert specialty is “Spiros’ tiramisu,” infused with Godiva, Tia Maria and Kahlua liqueurs ($7).
