North Fork Table and Inn, Southold: Kitchen changes
Stephan Bogardus has left the kitchen of North Fork Table and Inn in Southold.
The North Fork native came aboard as chef de cuisine in July 2011, a few months after Gerry Hayden, the restaurant’s executive chef and co-owner, was diagnosed with ALS (Lou Gehrig’s disease). In March 2013, Bogardus competed on the Food Network show Chopped.
Bogardus said that he has plans to move to the Rochester area later this year.
Hayden said that he would not be hiring another chef de cuisine. “I’m the chef,” he said. “I’m writing the menus, I come in every day, oversee the cooking and do what I can. Between me and the line cooks I’ve been working with for years, we are ready for the season."
North Fork Table and Inn is a collaboration between Hayden, his wife, pastry chef Claudia Fleming, and Mike and Mary Mraz, who handle the front of the house. When it opened in 2006, the casually elegant New American restaurant put the North Fork of Long Island on the national dining map. It received 4 stars the last time Newsday reviewed it.
