Knives are clanging, vegetables flying and fish getting cut and rolled at the new Izumi Sushi & Hibachi Steak House in Holbrook, which takes over the renovated former digs of Sonoma Grill (now in Holtsville). The offshoot of the cavernous Commack Izumi, recently profiled in a Newsday article on Long Island's hidden restaurants, features 16 communal hibachi tables on one side of the restaurant, and, on the other, a sushi bar, along with regular table seating.

On the menu: tuna tataki ($10.95), a yellowtail jalapeño roll ($5.25), an Izumi roll starring lobster tempura ($13.95), chirashi ($19.95), salmon teriyaki ($18.95) and a shrimp hibachi diner ($20.95) and a chicken and steak hibachi combo dinner ($19.95).

Izumi Sushi & Hibachi Steak House is at 745 Sunrise Hwy., Holbrook, 631- 218-3888
