There’s a new chef in the kitchen of Thom Thom in Wantagh. He’s Rafael Almonte, who previously cooked at Vittorio's in Amityville, Arthur Avenue in Smithtown and La Caravella in Hicksville. As Thom Thom owner Danny Wu tells it, Almonte brings a Mediterranean spin to the place, whose core New American and sushi menu hasn't changed.

Almonte will get a chance to show what he knows about Spanish cuisine next Wednesday, Feb. 29, at  a tapas and paella wine dinner costing $49.95 a person. Joseph Yi, owner of Varietals, a Manhasset wine and liquor store, will give a talk about the Spanish wines he selected for the evening.

On Almonte's menu: Six tapas dishes, among them steamed Taylor Bay scallops with garlic and white wine, chorizo with quail’s egg canapes and gambas al ajillo (shrimp in garlic sauce). Also, two paellas — seafood and chicken — made in paella pans measuring 5 feet in diameter, to be carried into the dining room. Diners will be able to have their plates refilled so long as the paella holds out. For dessert, there will be flan and leche frita, a Spanish fried pudding.
