Danny Wu, owner of the three-star West East Bistro in Hicksville, has bought Thom Thom Steak & Seafood in Wantagh. He brings with him both stability and change.

Continuing on as executive chef is Omar Bello, whose menu is similar to what it had been earlier. What's different, said Wu, is the sourcing of ingredients, which has been upgraded with an eye toward the natural.

There’s also a new sushi chef — Jae Bae, who trained in Japan and previously worked at Jewel Bako in Manhattan.

Wu has also overseen the renovation of an upstairs party room.

Currently, Thom Thom is running a three-course $24.95 prix-fixe, available Sunday to Thursday. Sample choices include an appetizer of kung pao calamari, a main course of slow braised pork osso buco and, for dessert, chocolate lava cake.

A Wednesday night live music program begins tonight with singer-songwriter-guitarist Cathy Kreger.

Next month, Wu said, he will officially relaunch the restaurant with an open house. Watch for updates.
