Plenty of new restaurants are starting their summer stays in the Hamptons. But it’s always good to try a perennial in the field of annuals. Fresno is one of them. The country-style, New American spot has been serving dependably satisfying food since 2004. Go for the salmon tartare, with scallion, lime and jalapeno, and a potato gaufrette; pappardelle with braised Duroc pork, olives, Calabrian chilies, and pecorino cheese; and the grilled hanger steak with pommes frites. The spiced chocolate pot de creme is an apropos finale.

In Cold Spring Harbor, a town long on charm but short on food, Sweetie Pies on Main is the obligatory snack stop. The friendly little café serves coffee (drip, pulled, cold-brewed) from Georgio’s in Farmingdale, and confections from many of Long Island’s top bakeries, Fiorello Dolce (Huntington), Young’s Farm (Glen Head) and Blue Duck (Southold) in addition to homemade soups and sandwiches.

One Block East is the kind of local bar with great eats that anyone would want in his or her neighborhood. Wantagh is lucky to have its compelling beer list as well as seasonal specials like the tasty soft shell crab sandwich ($13.95) and the generous lobster roll ($18.95). Look for Sunday drink deals, like $5 bloody Marys, bloody Caesars (with Clamato juice) and mimosas until 5 p.m.
