Terence Scarlatos, owner of Toast Coffeehouse, might just be one of the busiest restaurateurs on Long Island right now.

On top of running the popular all-day breakfast chain's four locations, he is closing its nighttime concept, Revival by Toast, by the end of this month, as well as launching two new eateries: The Study by Toast in East Setauket and Toast Coffeehouse at Station Yards in Ronkonkoma.

"This will be my first time opening two stores at once," Scarlatos said. "I’m only as good as my team and I’ve got a great support system behind me that has grown with me."

The decision to close Revival by Toast in the heart of Port Jefferson village was difficult, but it won’t necessarily be gone for good.

Revival is housed in the original home of Toast Coffeehouse on East Main Street in Port Jefferson. It opened in late 2022 and offers two tasting menus, "Short Story" and "Long Story," as well as cheese and chocolate fondue, Newsday previously reported. Toast has always had "dual concept potential," Scarlatos said. "So, it didn’t make sense really to pay rent for a nighttime thing when we can do both breakfast and lunch and then turn it to Revival on the weekends."

Service is expected to continue for a few weeks, until the six-person staff shifts to open The Study by Toast, a new "general store vibe" concept that Scarlatos is opening at the former Pita House on 100 S. Jersey Ave. in East Setauket. "Bring your books, study, hang out ... I just want people to feel like they can come in and relax and there’s no pressure you can stay as long as you want and have meetings, a little respite from your day," he said.

The Study is still being set up, but a sneak peek reveals fun wallpaper, brightly colored booths and bookcases. It will serve as a hub of sorts for the chainlet, with staffers roasting coffee, baking pastries such as English muffins and mixing pancake batter that will power the chain's other locations.

Then comes the launch of Toast Coffeehouse at Station Yards in Ronkonkoma later this spring, where Scarlatos hopes to to relaunch the nighttime Revival concept.
