It’s game on at Tres Palms in Babylon.

The waterside restaurant will offer a six-course dinner highlighting game and wines that go with it on Jan. 21. The cost is $95 a person. Dinner starts at 7 p.m.

The menu from chef Luis Vasquez, and Kevin O’Donnell from D’Artagnan, known for foie gras, caviar and charcuterie as well as game, beef and poultry, includes wine pairings.

Peconic Bay scallops with citrus beurre blanc find a match in Ruffino Prosecco; a trio of sausages pairs with Massimo Malbec; pan-seared foie gras with Ferrari-Carano Fume Blanc; roasted pheasant with Noble Vines 667 Pinot Noir; venison Wellington with Francis Ford Coppola Cabernet Sauvignon; and bread pudding and espresso churros with Chateau Ste. Michelle Riesling.

Owner Danny O’Donnell, a surfer, named his restaurant after a popular point break in Rincon, Puerto Rico. Tres Palms is situated on the waterfront at Great South Bay.
