It’s a fine time for pho, with The Rolling Spring Roll reopening its Farmingdale location Tuesday for lunch and dinner.
On Jan. 20, owner Joe Bui temporarily shuttered his original location at 189 Main St. in Farmingdale, a few days shy of the opening of a second, bigger location in Syosset at 228 W. Jericho Tpke. He decided to build stairs to the basement and insulate the entrance.
The Rolling Spring Roll opened in Farmingdale in 2013, a year after Bui rolled out his food truck of the same name, serving spring rolls, of course, along with banh mi sandwiches. The Farmingdale location built on the food truck menu to include pho (rice noodle soup) and bun (rice noodles with meat or vegetables).
The Syosset location expands the menu once more by offering entrees from $13 to $18, such as banh xeo, the crispy crepe made with rice flour, coconut milk and turmeric. Banh xeo is enjoyed by breaking off shards to scoop cabbage, onions, shrimp and pork onto the cracker, then wrapping it in mint, basil or romaine and dipping it in a sweet fish sauce.
The Rolling Spring Roll is at 228 W. Jericho Tpke., Syosset, 516-677-9090; and 189 Main St., Farmingdale, 631-586-6097, therollingspringroll.com.
